Sorted by hand into an ultra-gentle de-stemmer, four-day cold soak, yeasted, pumped over two to three times per day and fermented till dry. Skin contact for 19 days in total, then gently pressed in a basket press to control tannin expression.
Aged in all French oak barrels for 20 months, using 100% new Seguin-Moreau barrels. Bottled without filtration in order to maintain complexity, texture, color and capacity to age.
With a deep, concentrated purple hue, the wine offers a welcome accessibility and openness, but clearly has the structure to benefit from many years in the bottle.
An irresistible bouquet of black currants, hints of white chocolate and gamey or meaty notes give way to a broad, concentrated and silky wine, offering sweet, fine tannin, sexy, ripe fruit and toasty notes of the Seguin-Moreau French oak.
The finish is long, complex and entirely pleasurable! Cheers!
